Ingredients (Makes 6–8 clusters)
1 cup coconut yogurt
½ cup whipped cream (dairy-free or regular)
2 tbsp Second Nature French Vanilla Protein Powder
1 tbsp maple syrup
½–¾ cup strawberries, chopped
½ cup mini marshmallows, chopped if large
¼ cup dark chocolate, melted (for drizzling)
Method
In a medium bowl, whisk together the coconut yogurt, whipped cream, protein powder, and maple syrup until smooth and creamy. Add the chopped strawberries and marshmallows. Gently fold until everything is evenly distributed.
Spoon the mixture into a lined or silicone muffin tray, dividing it into 6–8 portions.
Place the tray in the freezer for 2–3 hours, or until the clusters are firm.
Melt the dark chocolate and drizzle it generously over the frozen clusters. Freeze for another 10 minutes to set.
Pop each cluster out of the tray and enjoy immediately, or store in an airtight container in the freezer for a ready-to-go holiday treat.
