Cinnamon Roll Pancakes
The most delicious festive breakfast. These were a lot harder to make perfect than thought. The trick is steaming them instead of flipping! See the full recipe below.
1 1/4 cup soy milk
1 tbsp apple cider vinegar
1 cup plain flour
2 heaped tbsp protein powder, you can use any @seconddnature flavours!
1 tbsp baking powder
1 tsp salt
For the cinnamon swirl
1/3 cup soft butter, I use vegan block
2 tbsp coconut sugar
1 tsp cinnamon
Mix together the soy milk and apple cider vinegar and set aside for 5 minutes until it thickens (it should be like a buttermilk texture.)
Add the flour, protein powder, baking powder and salt to a bowl and mix together. Pour in the buttermilk and mix well to combine.
Make the cinnamon swirl by mixing together the butter, coconut sugar and cinnamon in a bowl until combined then add scoop into a piping bag.
Heat a little coconut oil in a non-stick frying pan over medium heat.
Add 2–3 tablespoons of the mixture to the pan at a time, using a spoon to create a circle shape. Once it starts bubbling on the top make a swirl with the piping bag cinnamon mix.
Serve with coconut yogurt, fresh berries and maple syrup.
