High Protein Hedgehog Slice

This high protein hedgehog slice is one of my favourite healthy chocolate treats. It’s rich and fudgy with crunchy protein crisps throughout and a creamy dark chocolate topping — basically a healthier twist on a classic hedgehog slice.

It’s also completely no bake, made with simple ingredients and uses our Double Choc Fudge Protein Powder for an extra protein boost. Make a batch and keep it in the fridge or freezer for an easy chocolate snack throughout the week.

Ingredients

For the hedgehog slice

1 ½ cups almond flour

½ cup Second Nature Double Choc Fudge Protein Powder

¼ cup cocoa powder

⅓ cup almond butter

200 ml coconut cream

¼ cup maple syrup

1 cup protein crisps

For the chocolate topping

100 g dark chocolate

200 ml coconut cream

How to make high protein hedgehog slice

Line a loaf tin with baking paper. Combine the almond flour, Double Choc Fudge Protein Powder and cocoa powder in a large bowl.

Add the almond butter, coconut cream and maple syrup and mix until combined. Fold through the protein crisps.

Transfer into the lined loaf tin and press down firmly to create an even layer. Melt the dark chocolate and coconut cream together until smooth.

Pour over the base and spread evenly. Freeze for at least 3 hours or until completely set.

Slice into bars or squares and enjoy.

How to store it

Store your hedgehog slice in an airtight container in the fridge or freezer. I love keeping mine in the freezer and letting a piece soften for a few minutes before eating.
